## Frequently asked questions

### When is crawfish season?

Crawfish are most plentiful from late winter into early summer, with the peak often in spring, though it shifts with the weather each year. A board that says crawfish season is on should come down, or switch to other seafood, when your supply ends.

### How should flavors and heat be listed?

As two separate choices: first the flavor, such as Cajun, lemon pepper or garlic butter, then the heat from mild to extra hot. This board does it in that order with a warning that extra hot is the spiciest, which keeps orders clear at the counter.

### Where does a portrait menu TV fit in a boil restaurant?
