### What should a wood fired pizza menu board show?

Lead with the pizzas, because that is what the oven is for. A workable order is signature pizzas with size and price, then a build your own block with topping tiers, then pasta and sides, then drinks. Give each pizza a topping line of three or four ingredients rather than a sentence, since it is read from a queue. Put every price at the right hand edge of its row so the numbers form one column that can be scanned down in a single pass. Keep the chef's special and the opening hours in their own block, because those are the two things you will change most often and a separate block means editing one line instead of relaying the whole board. ### How many items should one pizzeria screen show?

Count priced lines, not dishes. A counter board is read in a few seconds by someone already in the queue, so around eight to ten priced lines per screen is the practical ceiling before the type has to shrink below a readable height. If the full range is longer, split it across two or three slides on a rotation rather than cramming one screen. Rotating also lets each slide do one job: pizzas on the first, pasta and sides on the second, drinks and the special on the third. Set the dwell long enough that a whole slide can be read before it changes, which in practice is eight to twelve seconds, not three.

### Do I have to put calories on my pizzeria menu board?

In the United States the FDA menu labelling rule applies to restaurants and similar retail food establishments that are part of a chain of 20 or more locations doing business under the same name and offering substantially the same menu items. If that describes you, the calorie count has to sit next to the item on the menu board, in type no smaller and no less prominent than the name or price of that item, alongside the standard statement that 2,000 calories a day is used for general nutrition advice. A single independent pizzeria sits outside the federal rule. Check your state and city requirements separately, because some local governments set their own.

### What size screen and text height do I need above the counter?

Work from viewing distance, not screen size. The sign trade rule of thumb is 25mm of capital letter height for every 3 metres of viewing distance, so a queue standing 6 metres back needs pizza names about 50mm tall on the glass. Measure from the till to the furthest point anyone reads from, apply that, then choose a screen large enough to render your smallest priced line at that height. A 16:9 landscape screen suits a counter run of pizzas above a pass; a portrait screen suits a narrow window or the wall between two doors. Hang the middle of the picture near eye level and read the finished board from the back of the queue before signing it off.
